  4. Ya que esté cocido el calamar, se saca de la olla y se aparta para cortarlo en trozos, al caldo se le remueven los cachos de cebolla y ajos y se le agregan los vegetales picados en cubos, la ramita de apio picada en cubos o medias lunas y el licuado de jitomate con chipotle; a fuego medio.
  5. Igual al caldo se le agrega el epazote(2 ramitas), el cilantro (5 ramitas), sal al gusto y el calamar picado en trozos y 1/2 cebolla cortada en julianas. Dejar que hierva.
  6. Listo para servir acompañar con cebolla picada y cilantro picado, en la foto agrégé surimi de decoración.
