  1. Preparación del caldo, se ponen a remojar los chiles secos en agua caliente y los tomates se ponen a hervir hasta que se vean despellejados.
  2. En una olla grande 6 a 8 litros, se le agrega el primer litro con el camarón seco licuado, el apio cortado en rodajas delgadas, las hojas de laurel, la sal y pimienta al gusto y los 3 cubos de consomé.
  3. Se le agregan otros dos litros de agua, y se le agregan las dos rodajas de pescado, la ramita de epazote y la mitad de una cebolla cortada en julianas.
  4. Para finalizar los chiles remojados y los tomates junto con un diente de ajo y la mitad de cebolla se ponen a licuar con 1 litro de agua y se cuelan para obtener solo el puré y no la basura (semillas cáscaras y otras cosas)
  5. Se le agrega el puré al caldo y otro litro de agua y dejar hervir y apagar el fuego. ya que se tiene la base, en otra olla de 2 litros aproximadamente, se le agrega 1 litro de caldo y junto con los mariscos que desee, 3 almejas, 4 mejillones, 4 camarones 1/2 filete de pescado, 1 almeja chocolata limpia y picada finamente, 1 barra de surimi cortada en rodajas y dejar hervir o calentar hasta que estén cocidos los mariscos, servir caliente. Es solo un ejemplo de como se combina
  6. Nota, esto de servir los mariscos en otra olla con caldo es porque no a todos nos gusta los mismos mariscos y es molesto andar escarbando la olla en busca de que si y que no le gusta al invitado.
  7. Si gusta disminuir mariscos puede agregar zanahoria y papa precocida.
  8. Al momento de servir acompáñelo con cebolla picada, cilantro picado y chile serrano, limón y su cacho de bolillo.
