  3. 80 gramos manteca de cerdo
  4. 1 taza azúcar
  5. 8 huevos
  6. 1 y 1/2 cucharada de levadura

  8. 1/2 cucharada sal
  9. 1 cucharada cafetera de canela
  10. 3 cucharadas ajonjolí

  1. Se lava el anís y se pone a hervir durante 2 minutos
  2. Se elabora la masa madre, se entibia 1/6 de taza de agua en la que se agrega la levadura, una 1/2 cucharada de azúcar y 1/2 cucharada de harina, procedemos a mezclar hasta que no queden grumos y la dejamos reposar.
  3. Tamizamos la harina haciendo un pozo en el centro de esta.
  4. Agregamos al centro de la harina los 8 huevos, la manteca de cerdo y la mantequilla, procediendo a mezclarlo en el centro de la harina.
  5. Agregamos una taza de azúcar y mezclamos, procediendo a agregar la 1/2 cucharada de sal, una cucharada cafetera de canela y mezclamos nuevamente.
  6. Agregamos el anís con todo y el agua donde se hirvió, para proceder a agregar la masa madre que ya doblo tamaño,
  7. Amasamos la masa hasta que ya no se pegue, (también para evitar que se pegue podemos embarrar un poco de manteca en la mesa y en las manos) que es aproximadamente 1 hora, y la dejamos tapada reposando durante 1 hora en un lugar cálido.
  8. Cuando la mase doble en tamaño amasamos para sacar el aire y la dividimos a la mitad, (aproximadamente 500 gramos) y las dejamos reposar tapada por 50 minutos o 1 hora.
  9. A los panes se les pone ajonjolí y se les hace una cortadura por el medio, para después colocarlos en una charola con poco de manteca y harina, también al final se les puede poner una carita típica del pan de muertos pero no es necesario.
  10. En un horno precalentado a 180 grados se mete el pan durante 18 minutos.
