  1. Para los higaditos
  2. 40 huevos
  3. 1 kg tomate
  4. 1/2 kg tomate
  5. 100 gr perejil fresco
  6. 2 cebollas
  7. 1 cabeza ajo
  8. Para la salsa
  9. 5 dientes ajo
  10. Chiles secos
  11. Para el caldo de pollo
  12. 1/2 pechuga de pollo
  13. 5 dientes ajo
  14. 1 cuarto cebolla
  15. Comino
  16. 2 clavos
  17. 2 pimientas
  18. Sal

Steps to make to make Higaditos

  1. Organizamos todos los materiales que vamos a usar
  2. Lavamos el pollo y lo ponemos en una olla a cocer con suficiente agua (se agregó ajo, sal, cebolla y comino)
  3. Tomamos una cebolla y los ajos, para picamos finamente
  4. Cortamos 400 gr de miltomate, medio kilo de tomate y reservamos
  5. Agregamos la cebolla y el ajo picados a una cazuela
  6. Una vez sazonada la cebolla y el ajo agregamos el miltomate
  7. Una vez cocido el miltomate, añadimos el tomate
  8. Molemos la cebolla que habíamos reservado y la agregamos a nuestra cazuela
  9. Molemos el tomate reservado con anterioridad y agregamos a la cazuela
  10. Molemos pimienta y comino en seco, después agregamos un poco de agua, lo colamos y agregamos a nuestra cazuela
  11. Una vez listo nuestro pollo, lo desmenuzamos y agregamos a la cazuela (reservamos el caldo de pollo)
  12. Cortamos nuestro perejil fresco y también agregamos a la cazuela
  13. Ponemos los huevos en un recipiente y lo revolvemos para que en la preparación quede uniforme
  14. Una vez esté bien revuelto el huevo, lo agregaremos cuidadosamente en la cazuela e iremos moviendo para que no se pegue
  15. Sin dejar de mover, iremos compactado el huevo (en este caso con una espátula, pero puede ser con platos) una vez listo checaremos que la textura esté firme con un cuchillo
  16. Cortaremos la preparación en trozos grandes y agregaremos el caldo de pollo que habíamos reservado y dejaremos hervir
  17. Lavamos y limpiamos nuestros chiles y los ponemos a cocer con miltomate y ajo, una vez listos, los molemos
  18. Es así como queda lista nuestra preparación, a disfrutar.
