- 1/2 kg Guías de calabaza
- 1/2 kg Calabacitas
- 1/4 de Flor de calabaza
- 50 gr Chepiche
- 200 gr Chepiles
- 4 Elotes tiernos
- 1/2 Cebolla
- 1/2 Cabeza ajo
- 150 gr Masa de maíz
- 25 gr Manteca de puerco
- 3 lt Agua
- C/n Sal
Instructions to make to make Caldo de Guías
- Primero lavamos todos nuestros ingredientes para que no queden residuos y estén limpios

- Le quitamos las hojas a nuestros elotes para que queden limpios


- Cortamos nuestros elotes en partes y reservamos

- Comenzamos a limpiar nuestras guías quitando todos los “pelitos” que tengan y cortando el tallo y reservamos.


- Ahora ya limpias nuestras calabacitas las cortamos en pedazos o en gajos para agregarlos a nuestro caldo


- Nuestras flores de calabaza las limpiamos y quitamos el tallo y retiramos el polen dejando solo nuestras hojas


- Ahora limpiamos nuestros chepiles quedándonos solo con las hojitas y a nuestros chepiches solo les cortamos la raíz



- En una olla colocamos nuestros 3 litros de agua junto con nuestros elotes y la sal al gusto, dejamos hervir

- En lo que hierven cortamos media cebolla y pelamos nuestros ajos

- Ya hervidos nuestros elotes agregamos nuestras calabacitas junto a nuestra cebolla y ajos, dejamos hasta que hierva

- Ya hervido agregamos nuestras guías e igual dejamos hasta hervir

- Listo eso agregamos nuestra flor de calabaza, chepiches y chepiles al caldo y dejamos hervir



- Mientras se hierve moldeamos un poco nuestra masa con la manteca y vamos formando bolitas con nuestra masa y en medio les hacemos un espacio a nuestras bolitas

- Se le agregan y dejamos hervir o hasta asegurarnos que ya todo está cocido

- Por último servimos nuestro caldo, podemos acompañarlo con salsa y limón o con un pedazo de tasajo.
